Vegetable stew

When getting more veg in you diet is doesn’t have to be the mandatory piece of broccoli or lettuce. I like making a stew  from time to time because it’s light on the stomach and you still get that feeling that you have eaten enough.

Ingredients needed

3 courgettes
3 carrots
1 onion
250g of mushrooms
1 tin of tinned tomato
Rock salt
Red kidney beans 240g
Black pepper

Chop onions courgettes carrots and mushrooms

add to pan out some then drizzle some olive oil

lightly pan fry the veg for 3 to 5 minutes

grab you tinned tomato blend in a blender for 5 seconds, and pour mixture into the pan, let the stew simmer for another 3 minutes, add some sea salt and black pepper and there you go dinner is served
